Bean Pot Lasagna

1 box of lasagna noodles
1 large jar spaghetti sauce
1 16 oz cottage cheese
1 egg
1 pound hamburger/ Italian sausage

Place thawed meat in bean pot with the lid on and microwave for 2 minutes. Break up the meat and cover again. Microwave for 2-4 more minutes until browned. Drain off any excess fat.

Next break up the noodles and place them in the bean pot. Mix the egg in with the cottage cheese and then mix into the bean pot with the sauce. Add 1 cup of water and mix again.

Place lid on bean pot and microwave for 20 minutes stirring every 5. If it starts to look dry, add a little more water as the noodles tend to eat up the moisture.

I love this recipe because usually when I make lasagna the traditional way, it takes forever to layer, and it just falls apart when I try to cut it up. This way it is already "cut" and everyone loves it just as much!

Salsa Potatoes

This recipe is great for when you are grilling and need a quick side dish!

5-8 potatoes
1 jar of salsa
8 oz shredded cheddar cheese

Clean and slice potatoes with skin on. Layer in bean pot with salsa and cheese. Put lid on and microwave for 10-15 minutes. You may stir them after 5 minutes to make sure all of them are well coated!

You may use more potatoes but it will take a little longer to cook! I love this as a side dish but you could easily add chicken or hamburger to the dish to make it a main dish.

Cherry Chip Cake

Another wonderful idea from my great hostess Julie!

1 cherry chip cake mix
1 can 7-up or sprite

Mix both together and put lid on bean pot. Microwave for 4 minutes. Take lid off and microwave for 4-6 more minutes until knife comes out clean!

White Fish for Supper!

This recipe is from my friend Denise again! I love getting new ideas from all of you so please let me know you recipe ideas!

Today I made white fish in the microwave- cool and healthy.

I melted about 2 TBS butter in the bean pot, added some fresh chopped red pepper and onion per personal taste and 2 servings of seasoned nice fillets of white fish. I had Haddock in my freezer but you could use any white fish.  I put the peppers and onions on top and around the seasoned fish and covered the bean pot. Cooked on high for 5-8 minutes until the fillets flake and let them sit for about 5 minutes.
Tasty, fast and fairly healthy!  (except for the butter- but can't cook without it!)
