Porcupine Meatballs

2 pounds hamburger
2 eggs
3/4 cup instant rice
1/4 cup onion

Mix together and form into balls. Place balls in bean pot.

Mix following ingredients in separate bowl:
15 oz tomato sauce
1 cup catsup
1 cup water
1 tsp onion powder
1 tsp garlic salt
dash of pepper

Pour sauce over meatballs. Place lid on bean pot and microwave for 20 minutes. Enjoy!

I always serve with rice or potatoes to use the gravy from the meatballs.

Chicken Terriyaki

We tried another great new recipe tonight!

1-1.5 pounds of chicken sliced or cubed
1 cup chicken broth
1/2 cup terriyaki or soy sauce (I used about half of each)
1/3 cup brown sugar
1 tsp minced garlic



Place chicken in bottom of bean pot. Remember that chicken must be thawed so you don't break your bean pot. Mix the other ingredients together and pour over chicken. Place lid on bean pot and microwave for 20 minutes.

You can easily add more chicken to the recipe as there is plenty of juice. We served it over fried rice (it was a mix) and everyone LOVED it!


Chili Soup

Chili Soup  is a major favorite around this house. We even eat it in the summer because it is such a good one!

1 pound hamburger browned in bean pot first
30 oz diced tomatoes
30 oz chili beans in sauce
15 oz kidney beans drained
12 oz can of V8 juice
1 can tomato soup
1 tsp chili powder (add more if you like it spicier!)
1 tsp minced garlic

Mix all ingredients and microwave for 20 minutes! We always enjoy it with shredded cheese and sour cream on top!

Almost Tator Tot Hotdish

1 pound hamburger browned
1/2 bag frozen shredded hashbrowns
use leftover green bean casserole.

Mix all ingredients and microwave for 10 minutes. This is such a great way to use all those leftovers after the holidays. You can even use the leftover chicken or turkey instead of hamburger!

Baked Ziti

1 box of ziti noodles uncooked
1 jar of alfredo sauce
1/2 jar of spaghetti sauce
1 cup mozzarella shredded cheese
1/2 cup Parmesan cheese 

Mix all ingredients and microwave for 20 minutes stirring every 5. If yours looks dry, add more of the spaghetti sauce.

Bacon Cheeseburger Soup


1 pound Velveeta cubed
1 pound hamburger browned
5 strips bacon cooked and crumbled
3/4 bag of hashbrown potatoes (cubed kind)
1 container Philadelphia Cooking Creme

Mix all ingredients in bean pot and microwave for 15 minutes stirring every 5.

Coke Chicken


3 or 4 chicken breasts thawed and sliced into large pieces
1 can of Cream of Mushroom Soup
1 can of Coke

Put chicken into bottom of bean pot. Cover with soup and then pop. Place lid on Bean Pot and microwave for 15-20 minutes. The gravy is great over potatoes, rice, or noodles. We had a garden supper so no gravy was needed for our food! ENJOY!

Shipwreck Dinner

Ingredients Needed:
1 15 oz can tomato sauce 1 can sliced potatoes drained
1 can of kidney beans rinsed 1 small can sliced mushrooms drained
1 pound hamburger browned 6 slices cooked bacon
1 tsp minced garlic

Brown the hamburger in your bean pot. Drain off excess fat and then mix in all other ingredients. Place lid on Bean Pot and microwave for 10 minutes.

I love to serve this with shredded cheddar cheese on top for a little more flavor! Such an easy and delicious meal!

Bean Pot Lasagna

1 box of lasagna noodles
1 large jar spaghetti sauce
1 16 oz cottage cheese
1 egg
1 pound hamburger/ Italian sausage

Place thawed meat in bean pot with the lid on and microwave for 2 minutes. Break up the meat and cover again. Microwave for 2-4 more minutes until browned. Drain off any excess fat.

Next break up the noodles and place them in the bean pot. Mix the egg in with the cottage cheese and then mix into the bean pot with the sauce. Add 1 cup of water and mix again.

Place lid on bean pot and microwave for 20 minutes stirring every 5. If it starts to look dry, add a little more water as the noodles tend to eat up the moisture.

I love this recipe because usually when I make lasagna the traditional way, it takes forever to layer, and it just falls apart when I try to cut it up. This way it is already "cut" and everyone loves it just as much!

White Fish for Supper!

This recipe is from my friend Denise again! I love getting new ideas from all of you so please let me know you recipe ideas!

Today I made white fish in the microwave- cool and healthy.

I melted about 2 TBS butter in the bean pot, added some fresh chopped red pepper and onion per personal taste and 2 servings of seasoned nice fillets of white fish. I had Haddock in my freezer but you could use any white fish.  I put the peppers and onions on top and around the seasoned fish and covered the bean pot. Cooked on high for 5-8 minutes until the fillets flake and let them sit for about 5 minutes.  
Tasty, fast and fairly healthy!  (except for the butter- but can't cook without it!)

Chicken and Peppers

Great way to use those great veggies available right now!

2 chicken breasts cut into strips.
2 peppers- whatever color cut into strips.
1 onion cut up
1 package mushrooms sliced.
Put all the ingredients into the bean pot and cover with one package with fajita seasoning. Mix with 1/2 cup water and put lid on.
Microwave for 15-20 minutes until chicken is cooked!
Serve with tortilla shells and cheese or just enjoy plain.

Hospitality Set Recipes!

Ok so here are some of the recipes I use for my hospitality set!

Pizza Braid

2 cans crescents     1 package pepperoni
1 can pizza sauce    1 8 oz mozz shredded cheese
pizza toppings

Lay crescents out on hospitality set. Put 3/4 cup of pizza sauce down middle of crescents. Layer remaining ingredients and pull crescents together.
Bake at 350 for 30 minutes.


Taco Braid

2 cans crescents    1 8 oz shredded cheddar cheese
1 pound hamburger browned and seasoned with taco seasoning
taco toppings

Lay crescents out on hospitality set. Put hamburger and cheese down middle of crescents. Layer remaining ingredients and pull crescents together.
Bake at 350 for 30 minutes.



Breakfast Fruit Braid

2 cans crescents     1 can pie filling
1 8 oz package cream cheese

Lay crescents out on hospitality set. Put pie filling and cream cheese cut into cubes down middle of crescents. Layer remaining ingredients and pull crescents together.
Can add extra frozen fruit to add more to the braid.
Bake at 350 for 30 minutes.

Denise's Stroganoff

1- 1 1/2 pounds cubed round steak
8-12 oz sliced mushrooms fresh or canned

Brown steak with 1/2 stick butter and favorite unsalted seasonings to taste and add muchrooms
Drain and add to Bean Pot.
Add 2 cups of beef broth, 16 oz sour cream, and 1 cup red wine/cooking sherry or broth. Also add 2 Tbs of cornstarch stirred with small amount of the liquids.

Cook covered at 225 for 6 hours or increase temp and decrease time if needed.

If too think after cooking, mix 2 Tbs of cornstarch with liquids and stir.

Serve over rice or egg noodles!

Micro Tenderloin

Pork tenderloin, 1-1.5 lbs.

Teriyaki marinade (try also with barbecue sauce)

Place tenderloin in Bean Pot. Pour teriyaki marinade over tenderloin until marinade covers half the tenderloin. Coat the entire tenderloin. Microwave 12-15 minutes.

Taco Soup


1 Lb ground beef, cooked & drained 1 – 28 oz can kidney beans*

1 – 28 oz can diced tomatoes* 1 – 14 oz can corn * (*DO NOT drain liquid)

Mix together in Bean Pot. Add 1-2 (depending on your spicy preference) packets of taco seasoning or 1 pkg Southwestern Chipotle dip mix and stir. In microwave, cook on high for 20 minutes. Serve with sour cream, cheese and corn chips.

Mom's Yummy Supper!


This one is one of my girls most favorites!
Brown 1 pound hamburger or cook 3 chicken breasts in bean pot.
Take meat out of bean pot and place in bean pot 2 cups instant rice and 2 cups water. Microwave for 5 minutes and leave lid on for 2 more minutes.
Then add one container of philly cream cheese cooking creme (our family likes the garlic one!)
and one bag of frozen veggies. Add the meat back too and stir. Then place lid on bean pot and microwave for 5 more minutes. This is an amazing supper that is good for us and easy to make!

Sour Cream Beef and Beans


1 pound hamburger browned
Mix with:
1 can pinto beans
1 can enchilada sauce
1 cup shredded cheddar cheese
Put lid on bean pot and microwave for 13 minutes.
Mix in 1 cup sour cream and 1/2 more shredded cheddar cheese and serve over crushed tortilla or corn chips!

Pork Chop Bake

Thaw 4 or 5 pork chops. Place in bottom of 9x13 pan. cover with a can of cream of mushroom soup and then top with french's french fried onions. Cover pan with foil and bake for 2 hours at 275 degrees. Then remove foil and put more onions and shredded cheddar cheese (about a cup) on top and put back in oven for 10 minutes.
Everyone at the house thought it was great!

Entire Meal Idea!

Chicken and Gravy:
Chicken breasts thawed and cut into large strips
1 can cream soup
1 can coke/dr pepper
Mix soup and pop together. Put chicken in bottom of bean pot and cover with gravy. Microwave for 15 mins to 25 depending on how much chicken you put in!

Cheesy Potatoes
Clean and slice about 8 red potatoes (may use regular too)
3/4 stick margarine
3/4 bag of shredded cheddar cheese
garlic, lawrys, and bacon bacon from tastefully simple
Layer potatoes, a couple pads of butter, cheese and seasonings in bean pot until full. Place lid on bean pot and microwave for 10-15 mins depending on how many potatoes.

Steamed Veggies:
Put grate in bottom of bean pot. Put enough water in the bottom to come up to the bottom o the grate. Put veggies in and put lid on bean pot. Then microwave for about 7 mins.

Apple Berry Crumble:
4-5 apples peeled and sliced
1 1/2 cups frozen berries
1 cup flour
1 cup oatmeal
1 cup sugar
1 tsp cinnamon
1 stick butter
Put sliced apples on bottom of bean pot. Pour berries over top. In another bowl, mix flour, oatmeal, sugar and cinnamon. Cut in butter until crumbly. Sprinkle on top of berries and place lid on bean pot. Microwave for 12-15 minutes!

Hamburger Helper

This weekend I ran out of time and made regular hamburger helper in the bean pot. First I thawed the hamburger, then put it in the bean pot for 4 minutes breaking it up after 2.
Then I added all the ingredients and microwaved for 10 minutes, stirring after 5. It was thick and better than when I make it in the pan!
